Indonesian beans are also no stranger to coffee drinkers out there, especially here in our country Malaysia. This Indonesian beans famously known as 'Mandheling' or 'Mandailing' originated from the North Sumatra Province, in Aceh. Mandheling is actually the name of an ethnic group in Aceh.
Coffee beans grown in the region of Sumatra is well known for their interesting flavour profile, low acidity, heavy and full bodied, complemented with a rustic or earthy tones. All that is contributed by their unique signature processing method, the wet-hulled or giling basah. It has been said that this processing method emerged in Aceh sometime in the late 1970s.
The giling basah method starts with a standard pulping process to get rid of the skin, followed by a brief overnight fermentation with the parchment still intact with its mucilage layer. Subsequently they undergo a washing process and dried briefly until it reaches a 25% to 30% moisture %.
The term 'triple picked' indicates a more meticulous preparation method of the green beans, they undergo three round of sorting and cleaning before they are packed and shipped.
This green coffee was purchased from our good friend at Sunrise Coffee Company, and it is roasted to a medium dark roast to enhance its unique flavour even more. Once brewed as an espresso, you'll be able to get its nice chocolate taste, followed by a lovely roasted peanut, that goes to herbal and creamy body, with a very bold tobacco like finish.
Our go to recipe for this beautiful single origin Indonesia Mandheling would be :
Input / Dose = 20grams
Output / Espresso = 35grams
Timing = 25-30 seconds
